Sautee onions on a skillet (I used Trader Joe’s coconut oil spray). Once they begin to caramelize, add chickpeas and BBQ sauce. Cook on skillet until sauce becomes tacky. Here I paired the chickpea mixture with rice, sautéed broccoli and chopped spinach. Feel free to use whole wheat pasta and any veggies of your choice. You can also put the chickpeas in a wrap with some lettuce, tomato and avocado for a delicious lunch option!
Combine ingredients and whisk until smooth.
