Vegan Tuna Salad

I’ve tried a few “veganized” tuna recipes, but this one by far is my favorite.  It has plenty of flavor and is packed with healthy fats, plant based protein, dietary fiber and essential vitamins and minerals (chickpeas contain adequate amounts of  iron, zinc, folate, phosphorous and B vitamins).  You’ll need minimal ingredients and only a few minutes of your time to get this recipe completed.  It’s also an extremely satiating and hearty meal, perfect for these cold winter days!

Ingredients
  • 1 Can Chickpeas (Drained and Rinsed)
  • 1 Avocado (Ripe)
  • 1-1/2 Tbsp Chopped Yellow Onion
  • 1/2 Tsp Garlic Powder
  • Dash Salt & Pepper
  • 2 Tbsp Vegan Mayo (Optional)
Instructions
  1. Combine all ingredients in a blender or food processor - you can alter measurements of seasonings to your liking

  2. Pulse slowly until desired consistency is reached  (I like my mixture to be thick and chunky with bits of the chickpeas still whole)

  3. Serve in a sandwich, wrap, over greens or as a dip with vegetables and crackers
