Vegan BBQ “Pulled Pork”
What if I said you can ‘veganize’ any of your favorite meals? A lot of people don’t realize there is a plant based version for pretty much any dish you want to make! Here is my version of a vegan pulled pork sandwich using Jack Fruit. It’s so easy to make and you only need a few ingredients.
Jackfruit is high in Fiber, Magnesium, Manganese, Copper, Folate, Pantothenic Acid as well as Vitamins A, B6, C, E and K. Being loaded with vitamins and minerals Jack Fruit can help maintain your blood pressure, improve digestion, give instant energy and even strengthen your immune system. So ditch the pork and try this version which is so much more healthy for you, the animals and the environment. 😉
- 1 Can Trader Joe's Green Jack Fruit
- 3-4 Tbsp Barbeque Sauce
- 1 Tsp Liquid Smoke
- 1/2 Tsp Garlic powder
- 1 Tsp Smoked Paprika
- Salt & Pepper (To Taste)
- 1-2 Tbsp Water (Optional)
Drain and rinse the Jack Fruit.
Add all ingredients to a non stick pan and sautee until the jack fruit begins to soften and the sauce carmelizes.
Pull apart jackfruit with a fork for the "shredded" appearance.
Serve in a sandwich, over rice, quinoa or a bed of greens.
