Vegan Meat Sauce

As a vegan I’m constantly getting asked “What do you eat besides lettuce?”  I actually have a pretty hefty appetite and eat a lot of different foods.  Sometimes I even crave something  “meaty” and this is where plant based meat substitutes come into place.   I try not to eat them too often since they are processed foods, but I do look for brands with minimal ingredients and healthier options.  This is also a great way my kids can have their favorite foods while still eating a plant based diet at home.  (Can’t seem to get them away from chicken nuggets!)

I have found that Gardein is a great brand and they sell a wide variety of products.  You can find them in your local grocery store (I get them from Stop n Shop).

Below is my super easy, quick and satisfying vegan meat sauce.  You can put this over pasta, zoodles, quinoa, rice or even a bed of greens.  Hope you enjoy and make sure to follow me on instagram @ashleyabatiello for daily vegan meal inspiration!

Ingredients
  • 1 Package Vegan Beef Crumble (I used Gardein)
  • 1/2 Yellow Onion (Chopped)
  • 1 Can Tomato Sauce
  • 1 Can Diced Tomatoes
  • 1 Tsp Garlic Powder
  • 1 Tsp Salt
  • Pepper (To Taste)
  • 2 Tsp Dry Basil
  • 1 Tbsp Agave Sweetener (Optional)
Instructions
  1. Sautee onions on a pan until they become translucent (I used organic olive oil cooking spray)

  2. Add tomato sauce, diced tomatoes and seasonings - Bring to a slow boil

  3. Add beef crumble and cook in sauce for approximately 10 minutes - If the sauce is too bitter for your liking, add agave or sweetener of your choice to cut the bitterness

  4. Serve over your favorite whole wheat pasta, zucchini noodles, quinoa, rice or a bed of greens - top with vegan parmesan and red pepper flakes (optional)
