Beef-less Chili
I’m a sucker for comfort food. Especially when it’s easy to make and good for you! This beef-less chili recipe is one that I have played around with a lot over the years (using different spices and whatnot). This is my current favorite version. Fast, easy and the whole family will love it! Makes plenty of servings so you can have meals leftover for the rest of the week too.
- 1 Can Diced & Fire Roasted Tomatoes (Use regular diced tomatoes for no spice)
- 1 Can Kidney or Black Beans (Drained and rinsed)
- 1 Can Corn (Drained and rinsed)
- 1 Package Beefless Ground Meat (Trader Joe's, Gardein, Beyond Meat are some of my favorite brands)
- 1 Tsp Garlic Powder
- 1 Tsp Cummin Powder
- 1 Tsp Turmeric Powder
- Salt & Pepper (To taste)
- 1 Small-Medium Yellow Onion
- 1/2 Avocado (For topping)

Chop and sauté onions on the stove in a medium pot until they caramelize (I used Trader Joe's coconut oil spray - You can use olive oil or water)

On medium heat add all other ingredients to the pot and mix together well

Let ingredients cook together for approximately 15 minutes so flavors can blend

Serve with sliced avocado over rice, pasta, quinoa, potatoes or greens
